I'd check out the alfaowner forum. I'm fairly certain this has been discussed at length  :)

Hi Alfatango,

Where are you located?

If a front drive shaft was replaced and the front toe setting now has "toe-in" or "zero-toe" the car will feel less "pointy" and lack initial turn in response.
Front end should have a bit of toe out to manage camber thrust.  Excessive toe out will wear the inside edges of your tyres.
Is the car a Ti?

Looks like you had 60 toe out intitially and they have now set it to 30 toe in?
If this is the case, the toe in explains the lack of initial turn in.

Mauceri Motors in Clayton has an on-site laser aligner.
